I see there is a path for an upgrade from Windows 2000 to
2003, namely 70-292/296, but there does not seem to be an
equivelant upgrade from Exchange 2000 to 2003.

I have looked at the MS site and it recommends 4 courses,
one of which is upgrading skills from Exchange 5.5 to 2003
and wondering why this would be relivant for current MCSE
    2000 holders?

If the course isn't relevant, don't take it. Microsoft doesn't
"recommend" courses. They list which courses cover material that may
    be on the exams.
