IN camera exposure manipulation

    I use a Canon 600D/Rebel T3i. Is there any way to manipulate the exposure control without changing the ISO/aperture/shutter speed ? (in camera before you take the shot?) << example...in dim light I want to shoot at iso 100/ f16/ and shutter speed 250 or 500 ?? like stooping water droplets bouncing off a flock of ducks on a very cloudy rainy day ??>>
