dRebel/RAW - How do I deal with this lighting situation

I'm shooting on the beach in brilliant sunshine. Slight haze with a
POL filter and a low sun behind me. I'm taking a picture of a white
sailboat on blue water. The POL filter knocks out any reflections
    from the water.

The RAW histogram is compressed. The toe is very short at both ends of
the curve. I can play with the over/under compensation to get the
bright end of the toe close the right of the scale.

It's a nice picture but I wonder if there isn't something to make it
    better in the camera.

Without looking at it I can't really say.

It would be like critiquing a painting by feeling the surface of the
    canvas.

Put an example up on the web and post a link.
