Difference between FEL and half depressing shutter button

    I have a Canon 300D.

    What is the difference between (a) hitting the "*" splat button and then
    recomposing within the 16 seconds and then taking the shot and (b)depressing
    the shutter button halfway and then recomposing and taking the shot.

    Do both methods only maintain the exposure settings and the lens will
    re-focus when the camera is recomposed?

    How can I expose and focus on the subject and then recompose but maintain
    the exposure AND focus? (ie I don't want the camera to re-focus after
    recomposing). Do I have to set the lens to manual focusing to achieve this?
