When upgrading in things mozilla, is it a case of just downloading and
the program is upgraded, or downloading and installing into the folder
the program is already in, or do programs have to be uninstalled and the
    upgrade then installed?

Using Firefox, Thunderbird and Sunbird . . . and see there's an
    update/upgrade for Thunderbird available.

If you have been using exe installers the installer will uninstall the
old version before installing the new, so just run the installer. If you
are using zip archives, delete the old program folder before extracting
    the new archive.
