When I take a picture with my Digital Rebel, all the information gets stored
along with the picture itself (camera type, lens type, shutter speed,
aperature size etc.) Does the lens serial number get stored too, albeit
hidden somewhere? If so, how can I get to this information?

No, the camera cannot detect the lens serial number. It can detect the focal
length and maximum/minimum aperture of the lens.
