If I have an email address in my clipboard, how do I add it to my contact
list, allowing all of the normal edit functions relating to how it
    displays etc?

Not sure what you mean, but if you open a contact, new or existing, and
just paste it into the email field, on an existing contact if you tab
off it, it'll put in a 'friendly' name based on the contact name (as
earlier versions of Outlook did too).
