notepad encoding in Win XP

    dear all,

    whenever i try to a save a notepad file in win Xp it is asking me
    in which encoding it should save the file ,it is giving the options
    as ANSI,UTF-8, unicode, unicode bigendian etc

    now my questions are as follows

    1) how different is these encoding options from ASCII encoding ?

    2) among ANSI,UTF-8, unicode, unicode bigendian which is the most
    portable encoding format ?
