Is there a utility which will allow monitoring all available channels
over a period of time to find out which are the 'quietest' ones?

Netstumbler (FREE) will monitor "active" channels with SSID broadcast turned on.
You could try various channels from your own Access Point and note the signal,
noise, and signal to noise data. (even with SSID turned off)
