When my form is submitted, I would the email to be formatted in a more readable
format. At the moment it is being received as just as text.

It is a very straight forward form with a little validation and an IF statement
for emailing to one of 2 people. It also redirects to a confirmation page.

I would like to email the data in HTML format

Modify your server-side process to do it.
