I think I understand the differences between WSS and MOSS and I think i
understand that 70-630 is MOSS and 70-631 is WSS. But I am not sure which
cert is best to get. Isn't MOSS what everyone is going to? Therefore, should
I take 70-630. Would that have more weight?

Truthfully, the very existence of your question suggests that you do not
understand the differences between WSS and MOSS.
Please return to Chapter 1 of your study materials.
Hint: WSS is the platform upon which MOSS is built.
The exam you take is dependent on the skillset you possess. Since learning
MOSS *requires* that you learn WSS, your starting point is the WSS exam
Whether or not "MOSS [is] what everyone is going to", depends on whether you
include only organizations with deep pockets, or organizations that
overspend and then only use the part of the product they could have obtained
for free (WSS)." I believe a bit of research will show that the ratio of WSS
implementations to MOSS implementations is quite high... being the
difference between FREE and several thousands of dollars.
