I've been studying all the material in order to become a Microsoft Certified
Desktop Support Technician, but the material covered in the courses seems a
bit limited to other things that can be learned about the Windows XP
Operating System, Desktop Apps, Networking,etc.

Will this exam be enough to say "Hey I'm certified; Can apply for this job
(of course, knowing it's a desktop support job)? " (without the extra info.
for the interview,etc.)?

If you are applying for DST jobs it should be enough... but for one more
exam (70-621) you can then upgrade your creds to MCITP: Enterprise Support
Technician.
