How do I organize my programs in Start Menu?

Using Win XP Pro.

I would like to put all my Adobe programs into a folder in my programs
area on my Start Menu. And do the same with other groups. But I
can't seem to find all those programs when I go to the "start Menu"
area of Explorer.

Also, how can I make it so it *always* opens all programs in the
Programs area of my start menu, instead of just recent programs.
