Is there any good books on the subject out there? I'd appreciate any
suggestions.

Those would be useful forensics books.

Penetration testing titles, on the other hand, are more along the
lines of Shellcoder's Handbook, Web Application Hacker's Handbook,
Hacking Exposed (albeit more of an intro), Database Hacker's Handbook.
