Does anyone else find that the more you train it, the less effective it
becomes?

It seemed to have a bell curve sort of thing, found no spam, then found
all, no it's back to finding almost none of it, and it is very spammy
looking spam.

Hang on in there, the spammer(s) has moved out of existing filter range.
Just show Thunderbird what is happening and things will improve, until the
cycle repeats.
