.htaccess -> redirect all traffic?

Will this instruction redirect *all* traffic (any page requested) from
the requested domain to the new domain?

Redirect 301 / http://www.example.com/

Short answer: Yes.

And by using 301 ("permanent"), you're also indicating to search
engines and other spiders that http://www.example.com/ will be the
permanent replacement for your site.
