What are the pros/cons of Canon EOS vs. S3?

A little hard to answer that, since "EOS" includes Rebel K2, Elan 7/7E, 3
and 1v film cameras, Rebel XT, 30D, 5D, 1D mkIIn and 1Ds mkII digital
cameras. Any particular one you'd like to compare to a Fuji (again, I
assume) Finepix Pro S3?

Or, God forbid, are you wanting a comparison between a DSLR and a POINT &
SHOOT???
Still a little hard to do, since the DSLR EOS range spans from $1000 to
$7000...

The real question is, what are the pros/cons of DSLR and P&S?
BTW, lower end DSLR (e.q. Canon EOS) doesn't really cost any more than
Canon S3.... but it appears that one has to invest in different lenses
with the former?

Then why didn't you ask that?
DSLR pros:
Flexibility, you can buy lenses as you need different lengths or widths, or
speeds for that matter.
Image Quality, larger sensor gives better signal/noise ratio, has other
advantages.
Upgrade path, part of the flexibility, you don't have to buy a new camera
when you find that you need a wider or longer lens, or larger aperture.
And, as you improve, you can upgrade bodies without having to buy new
lenses.
Image acquisition speed. DSLR bodies are available that will hit 8 frame
per second, and nearly all of them have faster response times than point and
shoots.
DSLR cons:
Weight
Expense
Size
Complexity.

P&S pros
size
Weight
simplicity
potental lower cost

Cons
lack of flexibility
Lesser (won't say "poorer) image quality.
