If you use Canon's software to convert using camera settings--and don't
change anything--then it will use the sharpening setting you chose
in-camera.
Or...You can convert it specifying any setting you select for conversion,
and the camera's settings will be ignored.

It is truly RAW...but it will use camera settings unless you tell it
otherwise.

No.. The top setting is maximum sharpening and the bottom
setting is minimum.. There is always sharpening.. The
middle is in between.

The RAW files have no white balance or sharpening or
contrast or saturation or anything else.

These camera parameters are recorded *along side* of the RAW
data. These settings aren't applied until open the RAW data in
your RAW editing program. Your editing program reads the
settings you chose and THEN uses them as the default settings.

This allows you to change the sharpening, white balance etc to
whatever you want after the fact.

Also, even when you have B/W set in Parameters, and shoot RAW + jpeg, the
RAW file is full color; only the jpeg file is B/W and saved as an RGB file.
