Sounds like the Rebel in that you get a new folder for every 100 files.

You can use the Canon software but you really want Photoshop CS with the RAW
plug-in, about half the cost of the camera.

It's a 20D, but everyone transposes something at some point....

For the number of folders, to minimize, simply reformat the card before
each shoot (assuming, of course, you've safely downloaded the images you
want to keep.)
