DVD compatibility question

I have three DVD player in the house and all of them work with recordable
media. But when I burn DVDs on the computer, program A produces a disc that
works on player X and Y but not Z. Program B makes a disc that works on
player X and Z but not Y.......etc. What's going on here?

I've heard that DVDs use MPEG2, but how many variations of MPEG2 are there?
There must be different bit rates because DVD recorders have 1,2,4 and 6
hour settings. Also, the transcoder/shrink programs must be changing
something.

Is there any good information about format variations on the web? How can I
find out what players support what formats? Next time I buy a player, I want
make sure it can handle everything.

DVD-R disks are compatible with more players than DVD+R.
