It's not an "easy" way but you could, if you are careful, change all
address book entries in one operation. An address book is a plain-text
file ending in ".mab" and can be edited.

FIRST BACKUP ALL THE .mab files. Close Thunderbird.

Next, open an address book file in Wordpad. Do a global replace as follows:

Search for: ^8E=0
Replace as desired where the numerical value is:
0 = unknown
1 = plain text
2 = HTML

Save the file, making sure that the type is text file.
